5 years ago if you told me that I would WILLINGLY give up meat and dairy (mainly dairy) I literally would have gotten offended and slapped you with a piece of cheese. Perfecting this recipe has been a very long trial and error process. Fear not I have come up with the best (according to me your expert) plant based bread recipe. The base I use is a recipe base for vegan banana bread, but I have made it my own by reducing and replacing flour and adding lots of yummy nutritious nuts and fruit!
My main focus with anything I make is firstly amping up the nutrition value as much as I can, and secondly but very importantly making it easy on the taste buds. People always tell me that they could never eat like me or stick to my "diet" but it is easy when you love everything you eat! Okay you guys I love a good smoothie BUT what is better than a smoothie.....a smoothie in a bowl. That is right ladies and gents. This glorious innovative generation full of aesthetically pleasing bloggers, pinterest pages, and instagram accounts has created this beautiful tasty breakfast bowl. I went to walmart and got a big ol bag of frozen mixed fruit. Here is the kicker folks, fruit is expensive (one pack of strawberries for $6 blueberries for $7 and raspberries $6 for 7 berries) you catch my drift here. I GOT THIS ONE BIG BAG FOR $10!! There is a lot more in there than it looks like so there is another bonus. I also bought bananas and froze a few of them.
Allow me to explain how I constructed this piece of art. I used the frozen fruit because it makes the smoothie thicker and colder so that you do not need to water it down with ice.

"UMMM Annalisa you have clearly ran out of ideas if you are showing me a bowl of oatmeal". Quite the contrary, I love oatmeal but I am someone who needs sweetness and brown sugar with my oatmeal totally defeating the purpose of a healthy breakfast. Okay everyone there is nothing that ruins your healthy meal like an unhealthy dressing, sauce, or topping. I have made an ALL PURPOSE, ALL HEALTHY, AND ALL YUMMY. I use this as a salad dressing if you want to thin it out to make it less creamy I add avocado oil and garlic salt. This can be used as a pasta sauce, it makes a good creamy tangy topping to your pasta and veggies. I also LOOVVEE a good sandwich sauce. This is perfect for sandwiches because of the texture and as you can see above I have topped it with a chai flax seed blend.

I know that I am no where near the first to try overnight oats. I needed to see for myself if people weren't just after the aesthetic of them but also the taste. Hitting up my local pinterest page I found some reliable looking recipes for overnight oats. I chose the chocolate strawberry recipe and followed it.....loosely.
I used quick oats and almond milk as my base. However much oats you pour, match the liquid amount. Instead of using yoghurt as my second layer I mashed half of a banana as a dairy free substitute. I covered those layers in a sheet of honey that I poured in.
If I could Brunch it out for every meal I would so stay tuned for all my favs!
